Some of my favorite dinner memories growing up was when my mom would make us
breakfast for dinner. This typically occurred when my dad was traveling on
business trips (he’s a meat and potatoes kinda guy). We’d usually have
pancakes, eggs, bacon and OJ for dinner, and on special nights my mom would
make us Mickey Mouse shaped pancakes! Last night chicken and rice just didn't sound good, but breakfast for dinner did! I made myself some whole wheat waffles and topped them with a little bit of peanut butter.
Another one of my favorite things to make for breakfast are
banana bread protein pancakes. I found this recipe on a wonderful blog I follow; Peanut Butter Fingers. This recipe only calls for a few ingredients, are protein packed and are absolutely delicious!
Banana Bread Protein Pancakes
Ingredients:
- 1/2 cup old fashioned oats
- 1/2 banana
- 1/4 cup cottage cheese
- 1 egg
- 1/2 teaspoon cinnamon
Instructions:
- Combine all of the ingredients above into a blender or magic bullet.
- Blend away until smooth.
- Spray a skillet with non-stick cooking spray and heat over medium heat.
- Ladle about 1/4 cup of the mixture onto the warm pan and cook until bubbles form in the center of the pancake. Flip and cook on the other side for a few minutes until browned.
- Top with syrup, the other half of the banana and a few dashes of cinnamon and enjoy!
The recipe above serves one. If I am making this for both Schoen and I, I double the recipe.
Just thinking about them is making my mouth water! Looks like I'll be whipping up a batch of these for breakfast Saturday morning! Now, on to today's events!
After working my way through the morning I had to run a few errands on my lunch break. On my way back to the office I swung by the grocery store to grab something to eat. While perusing the freezer section, Amy's Vegetable Lasagna caught my eye. Can't go wrong with organic pasta and veggies right? It was actually really good. The only complaint I had was that the sodium content was a bit high for my liking. But other than that, it gets two thumbs!
After work I headed straight to the gym to spend 30 minutes of quality time with the Stair Master. Our gym was really busy tonight which made for good people watching, so my time on the Stair Master flew by! After the gym I came home and made myself a big ol' salad!
I chopped up some romaine lettuce, 1/4 of an english cucumber, 1/2 of a green bell pepper, 1 small handful of cherry tomatoes, 2 hard boiled eggs (I removed the yolk from one), 1/2 of an avocado, 2 tbsp of red onion, and 4oz of chicken breast. I topped it all with some fat free dressing. It was delicious and definitely hit the spot! And yes, I ate it out of a huge tupperware bowl!
