Happy February!

Where did January go?? I cannot believe it is already February! 

My morning started off with my usual breakfast...oatmeal. I used to be more adventurous when it came to breakfast during the week. I'd make overnight oats, protein pancakes, or cream of wheat with egg whites and cinnamon. But lately all I've wanted is my plain old fashion oats. If you look closely, you will see friends on the TV in the living room. Thank you Netflix!! 




I also set up a mini "coffee bar" in our kitchen when we first moved in. I found that we wasted a ton of coffee using a normal coffee pot so I bought the new Keurig 2.0 and I LOVE it! It makes grabbing a cup of coffee in the morning a breeze. 




I placed a few coffee mugs I purchased from Target on a tray with some creamer and k-cups. I had a few extra mason jars laying around so I filled one with stir sticks and another with some Truvia and Splenda. 




After I was caffeinated I tackled the last remnants of our Super Bowl get together last night and prepped a few meals for us to eat throughout the week. I threw together two recipes from Skinnytaste.com. I made her Cheeseburger Casserole and her Crock Pot Sesame Honey Chicken. I've made both recipes before and both are husband approved! 



I used lean turkey rather than beef for the cheeseburger casserole. I've finally gotten my hubby on the Turkey train so we've been substituting it in every recipe we can. I did everything for the casserole except the topping. I will throw that on right before I bake it tomorrow night. It will be nice to be able to pull it out of the fridge top it with some fat free cheese and throw it right into the oven. I love making recipes like this during the week because we always have leftovers for the hubs to bring to work! 

Speaking of the hubs, I have a gym date with him as soon as he gets off work. I hope everyone has had a great Monday and an awesome start to their February!
