Last night's dinner was kind of random. I was craving tacos, but I was also in the mood to make something new. I went into the kitchen and pulled out some ingredients I had in the pantry/fridge and got to work. The end result was a turkey taco lasagna that was delicious!! 

I didn't follow a recipe, I just made it up as I went. This whole recipe only uses 4 small low carb flour tortillas, so it was definitely lower in carbs compared to a traditional taco dinner. It is also protein packed with tons of lean turkey meat, two kinds of beans and topped with greek yogurt in place of sour cream. 

This is also a husband approved recipe! Schoen actually said this may be one of his favorite meals! Here is the recipe:

Ingredients

Directions
  1. Lightly spray an 8x8 pan with cooking spray and preheat oven to 375°
  2. In a large skillet, brown the turkey meat and add the taco seasoning and prepare according to the package directions 
  3. Remove the turkey from the heat and allow to cool and thicken slightly
  4. Add about ½ cup of salsa to the bottom of the prepared dish 
  5. Evenly sprinkle ⅓ of the turkey mixture on top of the salsa 
  6. Add ⅓ of the drained black beans and diced tomatoes 
  7. Spread ⅓ of the refried beans on top of the turkey, beans and tomatoes
  8. Add a heavy sprinkling of cheese and top with 4-5 tortilla strips 
  9. Complete this process two more times or until all of your turkey meat is used
  10. After you add your last tortilla strips, top with the remainder of the salsa and sprinkle the top with the remaining cheese 
  11. Bake in the preheated oven for 30 minutes 
  12. Allow to rest for at least 20 minutes before slicing 
  13. Top with a dollop of fat free plain greek yogurt and a sprinkling of cilantro
