Usually my Sunday's consist of doing a bit of meal prep for the week. Lately, my meal prep has consisted of grilling up some chicken and making some plain white rice. Not very exciting, right? Well, I've been able to say goodbye to plain jane white rice thanks to Suddenly Grain Salad!
The Southwest Grains immediately caught my eye, but they are also available in Harvest Grains and Tuscan Grains.
This stuff is a cinch to make and it is absolutely delicious thanks to the mix of brown rice, quinoa, black beans, corn and red peppers. A super easy stir in vinaigrette is also included in the box which gives it a chipotle kick. This salad is delicious eaten by itself or along side some grilled chicken or some baked fish.
Another great thing about this salad? The leftovers can be easily incorporated into another dish the next day! I had some leftover
Southwest Grains Salad and decided to whip up a quick, easy and delicious chicken wrap for lunch.
I added some of the leftover Southwest Grains Salad to a low carb tortilla as well as some spicy guacamole, baby spinach and some grilled chicken.
This wrap is packed with some serious flavor and it has a spicy kick to it thanks to the spicy guacamole.
I ate my wrap along side some multigrain pita chips. And I may have used some of the
Southwest Salad as a dip as well...
